Valrhona Itakuja Brazil is exceptionally smooth on the palate. Because I usually have Valrhona Araguani 72%, this one seems really sweet at 55%, the chocolate flavor kicking in secoond instead of first.

This tempered beautifully, and the fruit notes at the end is especially nice with a fruity ganache
