“Absolutely delicious. First time I’ve cooked venison let alone saddle of venison. I took it to my local butcher to have it broken down into two tenderloins, a rolled roasting joint and some offcuts and bones used for broths and stews. Be wary there is a big bone through it so will take butchery skills or as I say a local butcher to help out. Also it does not take long at all to cook to medium rare!!! Defo use a heat thermometer!”
