Oh goodness, I'm so sorry to read your review on the calves liver, we will investigate with our suppliers as these should be nearly ready to go, with only a small amount of cleaning before cooking. In terms of flavour we would recommend to soak in milk for 30-60 minutes before cooking as this can really enhance the flavour and remove any bitterness.
