“The most complexly flavoursome bar of chocolate I've ever had. Whilst that doesn't necessarily make it my favourite bar of chocolate ever, it was nevertheless wonderful. The Modica delivers a product barely recognisable as chocolate - crumbly, matte, mottled and grainy, and the small amount of sugar is raw in the process, so the nar has a crunch. It delivers though a bar which extracts every last drop of flavour from the cocoa bean such that I just let every piece linger on the tongue to discover whatever new taste zinged into being. It's rich dark, complex, sophisticated, but also very edible. A revelation of taste and texture that made me question how much of what we commonly understand as being indiciative of good quality chocolate could be untrue. Excellent, and at a amazing low price.”

“Chocolate from Modica is a special thing. Known as glass chocolate because of the slightly granular nature of the sugar. Worth reading up on the history of this wonderful product.”
