Chilli infused coconut oil is the secret ingredient that converts an ordinary recipe to a brilliant one. I was unable to replicate the exact taste when this product was out of stock. I use it to cook coconut chicken. I dredge the small pieces of chicken thigh in plain flour and black pepper. Dust it off and fry in the chilli infused coconut oil until brown and crispy. Add your cut up vegetables, grated ginger, Lemon grass, garlic and then cook briefly. Add a small can of coconut cream, heat gently, do not boil and cautiously add some fish sauce. Everyone who smells it asks for the recipe.
