The products offered at the Campfire Cycling site seem especially appropriate for going out in the world by bike, whether that means a multi-day adventure or medium- to longer-distance commuting. They had the exact rack I was looking for and a pannier that should also fit the bill quite well. The purchase and delivery processes both worked out great.
