We have just returned from a tour of Turkey (Istanbul, Cappadocia & Ephesus) and found it excellent value for money.
The tour guides were extremely good and 2 of the 3 hotels were excellent.
The 3rd, in Istanbul wasn't the best, but to be honest, it was such a busy itinerary, we didn't spend long in the hotels anyway
The absolute highlight for me was a balloon ride in Cappadocia
