Matsoni/Caspian sea yoghurt Is just fab. I use UHT milk full fat or semi which needs no boiling; just pour out from the fermented jar and top up. I usually have 3 jars on the go. I did freeze some to take to my partner in Greece and now the family is making it. Curiously, the grandmother's family originates from Sansum.
