First new knife in almost 20 years. Been a Zwilling German steel user but couldn’t ever get the knife as sharp as I wanted. This knife with the no hand bolster thing allows me better grip and control. The knife is very sharp to start and I hope to learn to use my whetstone better now! I also appreciate the feel in my hand. More balance and much lighter
