Very informative and helpful...will get students to sit this test as part of their Hospitality and Catering course...disappointed that I read too much into the assessment questions, but I'm pretty certain if you can't keep hot holding food at correct temperature you should throw it out immediately. You should check temperature when you put it in and then 2 hourly. Enjoyed the course thanks
