We take our herring and smoke them for hours over smouldering wood chips until it takes on a deep substantial flavour and a smell that can penetrate armoured glass. A Manx kipper is a food item of gobal significance, right up there with Pata Negra Ham, Vacherin Cheese, Whitstable Native Oysters, and Blufin Tuna Sashimi. What you have in that display fridge is a dead fish dipped in floor varnish.
