Long time Chile roaster and consumer, native NM. I am disappointed in the quality of the roasted and peeled green chile this year and last year as well. The flavor is OK, but the texture is not what I have experienced for the previous 30+ years. The chile meat is darker, not the beautiful light green of years gone by, and the texture is somewhat "rubbery". That is the only way I know to describe it. The chile meat has a crunch to it when chewed which I do not find to be ideal, I do not recall that ever happening in the past years, aside from last year. I will try again next season and hope for a return to the texture I prefer.
