I ordered 10 lbs in 5 lbs packages of both medium and hot pods and chopped green chile. I really love to peel the skins off the chile but the Hatch Chile Store only provides skinless whole and chopped Green Chile. I believe that freezing the chiles with their skins on helps the roasted/toasted flavor of the peeling on the chile flesh. I love to make my own green sauces using a combination of the hot and medium chiles and use either cubed pork or cubed beef that imparts a full-bodied chile flavor that I grew up with as a northern New Mexico-born and bred former resident. with both Native Pueblo, Apache, and Hispanic DNA.
