Your chile is excellent!! The ONLY REASON I gave you three stars is that my order for hot and mild chile was mixed up. I ordered 3 lbs. mild, 3 lbs. medium and 2 lbs. hot. What I received was 2 lbs. mild, 3 lbs medium, and 3 lbs. hot. I also recognize that this is an honest mistake that anyone could make.
I look forward to making carne adovada, Texas chili, red chile ribs, etc. with your chile as the featured spice.
