Have been roasting fresh green chile from The Hatch Chile Store for years, and this year we decided it was time to let the experts do the job. We ordered roasted, peeled, and frozen green chile, and the product is wonderful. There is so much MORE to the pods! I guess my roasting tends to shrivel them up a bit. :-/ The flavor for the medium spiciness and level of spice is just awesome. Haven't tried the mild yet, but I've had it fresh and roasted it myself... I am sure it will be juuuuuusssst rrrrrriiiiiight! :-)
