I love Hatch chiles and it's so great to have them available frozen year round. Among the dishes I make is a Hatch Chile Chimichurri/Chicken/White Bean and Rice soup (photo) — just add Chimichurri sauce to chicken stock, cook some white beans and purée some of them, shred some chicken, put all in the pot with leftover cooked rice — and Hatch chiles! I top it with grated cheddar. Sour cream would also be welcome. It's one of our favorite soups.
