I was very excited when my Hatch Chile's arrived, they looked beautiful! But when we roasted them, the pulp/meat of the peppers were so thin they were extremely difficult to peel the skins off and very little actual pepper to enjoy. I heard from a relative that lives in the Hatch area that the "2nd" harvest is always better. Well - I don't know how to try and order that, and I'm pretty disappointed.
