I ordered my chiles a bit late in the season so about 1/4 of the chiles were red, I would have preferred all green. The order arrived 1 day early, unfortunately there was a cluster of about 10 chiles that were moldy. I cleaned out the moldy chiles, roasted the rest and we now have a about 4 gallons of green chile pork stew in the freezer.
