When I was planning our tour of Morocco they had a ton of options to choose from with such a variety that you could get exactly what you wanted. The tour company they hooked us up with thought of EVERYTHING! I had a million things going on when I was booking, so I couldn't research the accommodations the way I normally would and each time we went to a new place I held my breath, then we were truly impressed by how beautiful each hotel and riad was.
