I absolute love this salt: it has such depth of flavour. When I use it I feel a real connection to the sea, to the people who farm and process it. For me Halen mon Sea Salt is a symbol of love, care and attention in the craft of harnessing the natural goodness of the sea.
That's why I never any other salt in my Sourdough baking.
