Here's how they proceed: they send you an email to proceed with Zelle, but this email address is only valid for a short period of time, so that when you understand you have been fucked and you want to reverse the transaction you have nobody to talk to. In case you need to do a second payment they send another fake temporary email. Since Zelle is instantaneous and you have given your consent, the bank will not help you recover your money.
