I used to combine yam powder with flour for my okonomyaki. Yam powder is quite expensive and fresh yam is not available where I am. Upon trying this in my version of okonomyaki I was very impressed by the lightness and flavor of the finished pancake. This flour mix will be my new must have for making okonomyaki from now on!
