Using the Edge Pro form factor on TSProf, not on an Edge Pro device, and these plates have cut my average sharpening time almost in half. The 140 is super effective for damaged edges and the 400 cleans up the scratch mark with ease. Refining is left to the 800 and 1200 and a quick strop produces a good enough edge for 95% of my customers, safe queens and super steels notwithstanding. But then, I have other tricks for their satisfaction.
