“I use this typically for an injection and pork and chicken, but have also used this as a brine. The flavor is outstanding. Chef Tom doesn’t steer you wrong!”

“Try on reverse seared chicken thighs direct then indirect to finish. Ten hour soak has been our optimum time using dry rub very sparingly if at all.”
