Malaysian 'Dulang' – Festive Dishes

Dulang in the Malay language is a large, round tray, traditionally made of brass, copper or wood, originating from the Istana, the Malay palace. Makan sedulang – to eat from one dulang together – is about togetherness, equality and sharing. This is the theme for this cooking masterclass: two individuals cooking together and sharing the dishes served on the dulang. The dishes selected by Norman are based on Malaysian favourites and dishes from multicultural festivals

Prawn Laksa
Laksa is a big favourite during the festive season, especially Assam Laksa and for this masterclass, students will learn to cook prawn laksa using Malaysian herbs and spices.

Yee Sang
Prosperity salad served during the Lunar festival with finely cut vegetables and fruit tossed with hoisin and plum sauces, sesame seeds, peanuts and crispy crackers. Recipe from Norman’s Dutch cookbook ‘Maleisië’.

Mum’s Chicken Rendang
Norman’s family favourite rendang during the festive season. He will share cooking tips from his mum on how to cook the perfect rendang, which is slightly different from other methods.

Ketupat
Sticky rice originally wrapped in palm leaves, but here using easily sourced pandan leaves as an alternative for extra fragrance. To be served with rendang.

Bahulu
Also known as Malaysian madeleine, this traditional mini sponge cake historically comes from the Portuguese ‘Bolo’. Made of eggs, coconut sugar and flour. Norman will share tips and techniques he learned from watching his neighbours preparing the cake.

Note: All ingredients are halal and the menu can be adapted for vegetarian and vegan options.

“This cookery course was excellent fun and well structured. Norman and his team were great tutors and we learnt a lot in an afternoon where we cooked chicken rendang and assembled Nasi Lemak, made fried stuffed tofu, chicken satay, coconut rice and roti canai. Trying to stretch snd slap that roti was quite a challenge. Had so much food to eat at the end but in spite of bringing some food containers to take back left overs, the containers returned empty because we ate the lot as it was so delicious. Would really recommend this course.”

“Wonderful class with Norman Musa. He is very friendly and full of great tips. We made a lot of food! Although to be fair, he and his team had prepared sections of it beforehand to allow us to achieve so much. Looking forward to the PDF with all the recipes arriving!”

“We went along to Malaysian Streetfood Cooking Masterclass with Malaysian celebrity chef Norman Musa (and Rak and Flo). The venue at Mercato Metropolitano was vibrant and already in full swing when we got there. There were hundreds of street food vendors, various bars, and even a brewery - worth a visit on its own! The kitchen was simple but well-equipped, with everything we needed to make Malaysian chicken curry, prawn noodles, roti canai, and pandan pancakes with palm sugar and coconut. Our hosts could not have been more accommodating or instructive. After the aromas, sizzling and frying each pair had assembled their own meal. The group sat together outside in Mercato Metropolitano where we ate, drank and talked through the day. I can't wait to receive our digital copy of the recipes (hint hint!)”

“My partner and I did this cooking class as an anniversary gift to each other and it completely exceeded our expectations. From the get go the company looked professional and I knew we’d learn a whole lot of new things. The food we cooked was so delicious I can’t wait to try it at home. Norman and Rak are both outgoing and funny too. We had a good laugh and a great time! Highly recommend.”
