Malaysian 'Dulang' – Festive Dishes

Dulang in the Malay language is a large, round tray, traditionally made of brass, copper or wood, originating from the Istana, the Malay palace. Makan sedulang – to eat from one dulang together – is about togetherness, equality and sharing. This is the theme for this cooking masterclass: two individuals cooking together and sharing the dishes served on the dulang. The dishes selected by Norman are based on Malaysian favourites and dishes from multicultural festivals

Prawn Laksa
Laksa is a big favourite during the festive season, especially Assam Laksa and for this masterclass, students will learn to cook prawn laksa using Malaysian herbs and spices.

Yee Sang
Prosperity salad served during the Lunar festival with finely cut vegetables and fruit tossed with hoisin and plum sauces, sesame seeds, peanuts and crispy crackers. Recipe from Norman’s Dutch cookbook ‘Maleisië’.

Mum’s Chicken Rendang
Norman’s family favourite rendang during the festive season. He will share cooking tips from his mum on how to cook the perfect rendang, which is slightly different from other methods.

Ketupat
Sticky rice originally wrapped in palm leaves, but here using easily sourced pandan leaves as an alternative for extra fragrance. To be served with rendang.

Bahulu
Also known as Malaysian madeleine, this traditional mini sponge cake historically comes from the Portuguese ‘Bolo’. Made of eggs, coconut sugar and flour. Norman will share tips and techniques he learned from watching his neighbours preparing the cake.

Note: All ingredients are halal and the menu can be adapted for vegetarian and vegan options.

“This class was great! Norman is a wonderful and patient teacher. He taught us how to make delicious Roti Canai and Char Kway Teow, and kindly provided a protein alternative (Tempeh) for me so I could make vegetarian versions of these Malaysian classics. The atmosphere was great, especially sitting down at the end and listening to some of Norman's fascinating stories. Highly recommended!”
