“I smoked these ribs for three hours at 110C, then wrapped tightly in foil in the oven for two hours at the same temp, then brushed with BBQ sauce and another hour in the smoker. They were tender, chewy, smoky - exactly the way BBQ pork ribs should be! My only comment is that the membrane would ideally be removed from the rack, but it is easy to do this before cooking using a blunt knife until the edge and then grabbing with kitchen roll and tearing it off.”
