This is a great side dish. I love when the Joe crisps up in the oven but the downside is it shriveled up into not much. The flavours with the dressing and and the nuts are really nice. I made this a bigger dish by throwing in some extra roasted carrot and zucchini that I had and it made two lunches.

It was ok but I think it would have been better if I had defrosted it rather than cooking it from frozen as the pumpkin went mushy. Also there was far too much freekeh for me.

The Roast vegetables with miso, cashews and freekeh has been one of our best sellers as an accompaniment to our winter dinners and it's also perfect as a stand-alone vegetarian dish! We're sorry you found it to have too much freekeh. The roast pumpkin is a softer vegetable when baked than the roast carrots and beetroot, but your feedback is helpful and I'll pass this to our menu director to see if the recipe can be adjusted to help ensure the perfect consistency!
