It was ok but I think it would have been better if I had defrosted it rather than cooking it from frozen as the pumpkin went mushy. Also there was far too much freekeh for me.

The Roast vegetables with miso, cashews and freekeh has been one of our best sellers as an accompaniment to our winter dinners and it's also perfect as a stand-alone vegetarian dish! We're sorry you found it to have too much freekeh. The roast pumpkin is a softer vegetable when baked than the roast carrots and beetroot, but your feedback is helpful and I'll pass this to our menu director to see if the recipe can be adjusted to help ensure the perfect consistency! This meal was really delicious. The only thing is that I am diabetic and after this meal my bgl was quite high. Never had freekeh before and wondered if that was the reason for the higher than usual level. Overall, this meal was wonderful.

Not many companies offer good vegetarian options. The Dinner Ladies vegetarian offerings are all super yummy.
