An alternative to the chef's knife. Great for cutting, chopping and mincing vegetables. The blade has a straighter edge than a chef's knife, a hollow ground edge for better food release, and a blunted sheepsfoot-tip blade with a thinner spine. It can easily slice thin-boned and boneless meats, fish and vegetables. The GS series is a classic collection of small to medium-sized knives for general and special preparation.

Nice size. Great for chopping veggies. One of my go-to prep knives - look forward to chopping and prep work now (certainly more than pre-Global Cutlery). Very lightweight. Extremely sharp. Like a straight edge razor with a handle.

The Global knives are a favorite of mine! I like the longevity, the ease of sharpening, the light weight, the over all shape of their knives... They are my favorite knives in the kitchen!

Nice size for times when I want a smaller knife than my larger Santoku or bigger chef knife.
