A Santoku knife is a versatile Japanese kitchen knife characterized by its shorter, wider blade with a flat edge and a sheep's foot tip. The Santoku is optimized for precise, straight up-and-down chopping motions. The key benefits include excellent precision for thin slicing vegetables, superior maneuverability, lighter weight that reduces fatigue, and a balanced design that allows for more controlled, efficient cutting across different ingredients like meats, fish, and produce. Its name literally means "three virtues" in Japanese, referring to its proficiency in slicing, dicing, and mincing. GLOBAL SAI, designed by renowned industrial designer Komin Yamada, pays homage to the Samurai tradition of sword making. The slightly longer curved ergonomic handle provides a comfortable grip and features 7 signature black dots which represent the 7 Samurai codes of honor and moral principles. The blade's edge is polished by hand for exceptional long-lasting endurance. The unique thumb rest gives added comfort and control. Each blade is individually hammered by hand and designed so that small hollows create air pockets between the blade so food elegantly falls away from the surface.

I may just have had terrible knives for too long, but I almost cried at how nice this knife is. The grip is extremely comfortable and it cuts so nicely. I will have to see how long it is before I need to sharpen it, but so far, I am extremely pleased with this purchase.
