I am starting a chicken slaughter eviceration and packing business and I had difficulty deciding on which course to take from the choices you gave I had done an elementary course 5 years ago I found this level 2 course a helpful refresher.

There were some errors, eg a question about how to tell if a joint has been cooked with the answer 70C for 2 minutes or 75C for 30 seconds. Some missing points, such as how to disinfect if you don't have a dish washer and how to control ambient display items, eg pastries
