Hi Louise, thank you for your review and feedback! Electric probe thermometers can be used alongside in-place devices when checking temperatures and creating documentation. The content for this is in the 'Food Preparation' module under the topic 'Calibration'. An example of using electric probe thermometers is when devices are sent through the pasteuriser frequently to document the pasteuriser temperature, and ensure it was operating at a temperature that would reduce bacteria to a safe level. These needed to be calibrated periodically to verify that they were accurate. Other uses are to check and record chilled or frozen delivery temperatures, quality testing and thermal process validation.
