the question about the best way to ensure a food delivery is transported safely is not correct. pre cooling a trailer is only true for "chilled food", you can also transport frozen food and ambient food, the vagueness of the question means non of the answers seemed logical. Also the answer to the question about the reason for rapidly chilling food after preparation is wrong. it does not reduce the number of bacteria, it slows the multiplication of bacteria. This is a direct contradiction of a later question about the effect of freezing food. The answer should be "rapidly chilling food slows the multiplication of bacteria" Many of the other questions are phrased in a way to simply "catch out" the person taking the test. this is a poor methodology when designing multiple choice questions.
