Good. I placed three steaks in separate pouches along with a sprig of rosemary and thyme plus a tablespoon of olive oil then vacuum sealed them. I cooked them sous vide @ 132 F for one hour. After one hour I took them out of the pouches, patted them dry and then seared them in a pre-heated cast iron skillet using ghee as an oil for one minute per side.

I had Elk for the 1st time. I was not disappointed... Made a pot of bison stew last weekend too. Splendid...
