“So I love King Ranch casserole, enchilada casserole, etc. This one is weird. The top half is very good; the bottom half tastes like nothing and is mushy. Looks nice once it's done. Part of the problem is, as others noted, the cooling directions are way off. Instructions say Keep frozen--cook at 350 for 45 minutes. LOL. I did that-cookie sheet and foil as instructed. It was still cold! I actually thought my oven had turned off. I did 15 more minutes at 350, then 30 more at 400, then another 15 or so uncovered so it would golden-brown. By then it was cooked through & still not dry at all, which was good. But the 45 minutes is clearly for a thawed in the fridge for 24 hrs first product, NOT frozen. Would it be less mushy if the cooling directions were correct--say 90 minutes at 350? Maybe. Would the bottom half have more taste? Can't see how. By the way for meal planning, I served it w/ chilled chardonnay, tortilla chips and salsa, and an Omaha Steaks chocolate mini bundt cake w/ Bluebell ice cream for dessert. Salad would have rounded it out well, plus (maybe) Spanish rice or tortilla soup.”
