“This was delicious; very nicely seasoned, not greasy despite the wrapping of crispy pork belly which just bathes the meat - much moister loin meat than the typical pork loin but the darker meat was my favorite. I had originally intended to serve this formally with potatoes, vegetables, etc. I decided my kids and adult grands would prefer something less formal.
I always think having a "theme" for a celebratory meal or party makes the menu come together so much more easily. Starring this Tuscan favorite, we had [mostly] Italian accompaniments.
We had a small antipasti course (including a lot of crudites with a ricotta lemon dip) to begin. For the main course I purchased telera rolls (Mexican torta rolls, one can also use bolillos or a similar sturdy roll) for "make your own" sandwiches. Generous servings for 10 adults with a lot left over.
I also served assorted olives and peppers, steamed artichokes with butter, Mackenzie's gorgeous spinach and cheese gateau, and some Trader Joe's sweet potato fries. A homemade (with a white cake mix!) Italian Cream Cake rounded out our celebration.”
