“In a nice black box, you get delivered a thin, light knife with a red handle. Takamura's R2 santoku was my first ever Japanese-style knife, and I have to say I was more than impressed with it. The blade is so very sharp it simply falls through the food. I have tried it on various vegetables (carrots, onions, peppers) and on cooked chicken breasts.
Once you try holding it in your hands, you can feel its nimble nature. It is a laser of a knife. The only drawback with such a thin grind is you have to be careful not to chip it, so stay away from bones and hard vegetables, such as squash. I would also recommend a good quality cutting board, so stay away from ones made from glass and bamboo.
The price/performance for the R2 Takamuras is excellent, so you can't go wrong with any of them.”
