“In my perfect world, these "gyoza" pans would be available in many sizes. I can, and do, use these for my gyoza. But also for drying and freezing my homemade meatballs, Italian gnocchi and Italian sausage. This absolutely GENIUS but simple design of 4 brackets, one welded to each corner, allows airflow. It allows moisture release, but not excessively. I only wish MTC would also sell a version with slightly higher walls (2 inches vs. 1.5). They do exist, but it's near impossible to get them outside of Japan. I'm very happy with this purchase, and I'll use these pans weekly. Thanks!”
