“I started coveting New West knives years ago after seeing their ads in Fine Cooking magazine (R.I.P.). They were gorgeous but pricey, so I kept using what I thought were decent knives. Last year I treated myself to the Deli knife and realized the value of the knife is greater than the cost. It slices through both delicate croissants and dense bagels with ease. I cut up Uncrustables for a family member and it leaves the PB&J unharmed. I then bought the Teton Santoku and a paring knife, and do not use any of my other old knives. I also purchased a set of the same three knives as a wedding/housewarming present for my niece and her fiance. Lastly, as you wash and dry the knife (by hand, of course), the blade makes a sound like a fine sword being drawn from its sheath. Well crafted, beautiful, and of course, functional.”
“A nice knife. I have tried using this knife as a general board knife but I would not recommend that having caught my finger nail once or twice (but never cut myself on the serrations). This thing is sharp! A great knife for tomatoes and other soft veg and fruit. It also works great as a small bread knife for beagles and flatter rustic loafs.”
