“Recently, I contacted new West about a knife replacement for a set I purchased over 20 years ago. the 6 inch Ironwood handle was the closest match to my original purchase. It’s a beautifully handcrafted knife. Dangerously sharp.”
“After reading several positive reviews, I decided to try the Petty knife even though I'm always reluctant to order knives online. I chose the Petty knife because it filled the gap in my lineup between my paring knife and my smallest chef's knife, which are the two I use most often. Being a traditionalist, I ordered one with the ironwood handle instead of the popular, multicolored laminate handles. When it arrived I discovered it's a thing of beauty. The ironwood scales are substantial, with a fine, satin finish. Most importantly, it fits my hand nicely, regardless of which grip I use, and is well balanced with most of the knife's weight in the handle. It's a very nimble knife with excellent precision and control. I really like it and recommend it. I may have to get an ironwood chef's knife, or perhaps a fillet knife, as well, soon.”
“This is my second new west knife, and it is just as great. Perfectly sharp out of the box, strong and thin blade, sharpens and holds an edge wonderfully. At first, it felt handle-heavy, but that was because I was holding it pinching the base of the blade like my larger chef's knife. But the handle is shaped and weighted perfectly for a pinch at the base of the handle instead, with the rest of the handle perfectly supported by and shaped for the rest of my fingers. Another winner!”
“This is my all time favorite task knife for the kitchen. I like it so much I bought a second in Ironwood. The first one is the sunny orange and yellow colored pattern to brighten up my counter.”
