“Replaced Ratio Six plastic basket. Paper filter placement easier/smoother with stainless steel basket (for me, tiny but pleasant difference). Coffee still great. More condensation on unit housing that's directly over coffee pot. BUT cu r i o u s: with importance of water temp during brewing process, what's temp effect of open air gap between main unit shower head and s.s. basket top, as compared to Ratio Six plastic basket/collar where no gap exists ? Ratio Eight has similar air gap; do I conclude Ratio Six basket collar design is actually of no consequence with respect to final product?”

Regarding temperature retention, the heat shield does provide a slight improvement by helping retain heat during brewing, though the difference isn't consequential. Traditional pour-over brewing is designed as an open brewing method, and this approach has long been trusted in the specialty coffee world for producing excellent results. Whether you choose to use the heat shield or brew without it, you can expect consistently outstanding coffee.
