“This vinegar is the perfect sweet-tart-fruity vinegar to dress delicate greens. I would not use a strong extra virgin olive oil with it, because it would mute its flavor, but a nut oil is fantastic and I have even used a neutral avocado oil. If you add a little bit of mayonnaise to the dressing, it will emulsify and stay blended. I've also used it drizzled on salmon and on cold roast chicken. I needed to order some during the coronavirus lockdown, because no way would I want to be out of it!”
