I have never owned a boning knife, so knife was a revelation. It works well - so much better than chef's knives for this task. I generally don't have special purpose knives, but this one slides down bone and easily gets into complicated crevices The handle is a little problematic for me though. It's too smooth, I lose the ability to grip well when the handle becomes damp or greasy. I hope they add a little texture on the next version.
