“I filleted the Monkfish, then stuffed it with Sage, Almond & Cranberry Pork Stuffing and wrapped streaky bacon around before wrapping in cling film and forming a cylinder. Chilled for 30 minutes before Sous vide for 20 minutes. Remove from cling film and finished it in a pan with butter to crisp the bacon up and served with roast potatoes and all the normal vegetables - yum, yum. A lovely alternative to Turkey on Xmas Day - beautiful.”
