Shinsei “Junmai Daiginjo” Reviews

Given that this was my second taste test and it was also a daiginjō, I was excited to tease apart the differences from my Nanbu Bijin Daiginjo experience. Was a junmai really different from a honjōzō? Would softer water matter? How about a slight difference in RPR and in alcohol content? I tasted it chilled and found that the answer is yes to all of the above. The Shinsei Junmai Daiginjō offered a subtle rainbow of flavor. It was soft, sweet, fruity, and aromatic. It was light on the tongue and smooth. Even the bottle itself was more slender than the norm. This daiginjō can be classified as “a friend” of sorts. A mellow flavor to enjoy as you sit back and contemplate the stars.
