“I ordered this sake to use as an example in my “Ordering Japanese Sake in a Restaurant” lesson in my Japanese Faves series on my Chef’s Apprentice YouTube channel. It’s junmai pure rice style, made with Dewasansan rice and an RPR of 60% (though it is not sold as a ginjo) and is partially unpasteurized (namazume, just before storage but not a second time before bottling), which gives it a liveliness and depth. Its low acidity makes it seem a little sweeter than its SMV +2 would lead you to assume, but that’s not a bad thing. I liked this sake very much. Great for slightly spicy food.”
