We keep coming back to this, having first tried it after watching the documentary about its brewery ("The Birth of Sake). I am not experienced at describing sakes but this seems smooth while also complex enough to keep our interest, and we like to have it with tako wasabi and sashimi dinner.

Wow, tako wasabi and sashimi sounds amazing. We love the nuances that sake provides, and how it reveals a different side depending on the different pairings, settings, temperatures etc. Thank you for your review and we're right there with you with a tissue box watching the movie "Birth of Sake" !

While the wood flavor was much more subtle than I expected, this was a fabulous drink and a great pairing especially with fish. I personally found it particularly enjoyable warm. The refrigerated temperature I found not that special though

Wonderfully crafted saké. Definitely worth the try. Honestly one of my new favorites given its unique flavor profile.

I found this to be a solid yamahai-style sake. I didn't find this maybe as 'woody' as the description alludes to, but was very enjoyable - round and savory. I'm a fan of yamahai and would come back to this one. I had this sake without knowing about this documentary relationship, just looking for good earthy sake.
