I simply did not like the umami taste, the contrast between sweet/umami didn’t go together well was too strange for my palate. This was the worst sake I’ve ever had.

Eliot - we are sorry to hear this was the worst sake you've ever had. It's definitely a sake that thinks outside the box, and we've reconsidered offering this to our Tippsy Sake Club members who may no appreciate it as much as the sake geeks who age it at home, or enjoy it with ice cream etc. I just want you to know your review has had an impact in how we consider the broad range of sake, and we really appreciate the opportunity to make our site and offerings better. Enjoyed at room temperature with ice cream after dinner (seriously try this!). There are earth and butterscotch notes on the nose, and the palate is sweet. This sake is smooth and an interesting journey to the past.
