I tried the Wakabotan Hinohikari bottle last week and really enjoyed it, so figured as this is made with Yamadanishiki rice, I should like this one even more. I thought it might have been me, so I am glad another reviewer mentioned it being dry, as the first couple of glasses were light and dry with just a whisper of sweetness. It was still enjoyable, just not what I was expecting. Oddly, I tried another couple of glasses the following evening and it was closer to the tasting notes. It was still dry but had more of a light sweetness throughout, I would say kind of like a honeydew melon. Overall, this is a fantastic sake, especially if your prefer it more on the dry side. It is definitely unique and worth a try. My rating is based on my preference for sweeter sake and should not be taken as a reflection on the overall quality, which is great, I simply enjoyed the “Pink Peony” bottle more.

I enjoyed it a lot. This sake is more balanced than Wakabotan's Hinohikari 50 with slight sweetness.

Smooth and fragrant. Combines subtle notes of pear and hints of melon with a slight sweet after taste. I enjoyed it not only cold but also hot at 100oF in an ochoko enhancing the sweetness characteristics

I love sake that finishes with a touch of sharpness, and this delivers. It is still smooth and nuanced, but with the perfect hint of a bite that let's you know you are drinking. It is on the dry side, which is also my preference. Overall, a great bottle to enjoy with food or without.
