The first bottle that I have ever attempted to evaluate. It’s hard to gauge as my benchmarks are themselves muddled. I bought it as the most expensive of my six-bottle purchase from Tippsy Sake. I tasted it chilled, practicing this newfound art of clarity, nose, mixing air in the sip, retronasal aromas, and then noticing how the flavors intensified as I had my second and third ochōko. It started gently, almost like fragrant water, with fruity nuances. This fruity taste was always gentle but it grew. I tasted melon and also a soft finish of fennel which made it more intense. There was a bit of bitterness but a good sensibility rather than a bad aftertaste. I even (oddly) paired it with homemade butter chicken. It got sweeter and more intense. I will try this saké on its own again because I find myself quite attracted to its secret intensity.
